蒙古族糌粑传统制作技艺调查

A Research on the Traditional Craftsmanship of Mongolia Zanba

  • 摘要: 糌粑是新疆蒙古族日常饮食不可缺少的传统面食之一,其手工制作技艺至今仍在其生活中较为完整地保存,在现有文献中,对其制作工艺考察记录者却尚未见到,致使时人对这种面食制作技艺缺乏更多的了解和认识。全程纪录新疆蒙古族牧民制作糌粑的调查,毫无疑问是对这一传统手工制作技艺的有效保护和传承。

     

    Abstract: Zanba is an indispensable part of traditional pasta in the daily diet of Mongolians in Xinjiang. Its craftsmanship is still well preserved nowadays in the natives life. However, there is no record of it in present documents, so people have little knowledge of the craftsmanship. A survey of a full recording of Xinjiang Mongolian herdsmen making Zanba, which without doubt is an effective protection and inheritance of the craftsmanship.
