Analysis of Key Acidic Aroma Components of Canadian Tobacco Leaves Mainstream Smoke Based on Odor Activity Value

  • Purpose To identify the key acidic aroma components in Canadian tobacco leaves mainstream smoke, providing a reference for the development of flavor with Canadian tobacco style characteristics.
    Methods Using the acidic components of mainstream smoke of Canadian tobacco leaves as the research object, the reasonable and effective segmentation was carried out through column chromatography and medium pressing preparation technology. Guided by sensory evaluation and combined with GC-MS analysis, the characteristic groups were determined. The important acidic aroma components were quantitatively analyzed and the corresponding odor activity value (odor activity value, OAV) was calculated.
    Results 1) The acidic characteristic components of Canadian tobacco leaves smoke were mainly small molecule acid and aromatic acid groups, and 16 important acidic aroma components of them were identified. The mass concentration of isovaleric acid (1.09 mg/mL) and phenylacetic acid (6.44 mg/mL) were the highest in small molecular acid and aromatic acid group, respectively. 2) The OAV of 16 components were all greater than one, among which isovaleric acid and phenylacetic acid had the largest OAV.
    Conclusion Isovaleric acid and phenylacetic acid are the key acidic aroma components in mainstream smoke of Canadian tobacco leaves.
