Analysis of Texture Characteristics of Seed Melon Peel in Different Specifications and Parts

  • PurposeTo study the difference, variation degree and change law of the texture characteristics of different sizes and different parts of the seed melon peel.
    MethodThree different specifications of seed melons peel of small, medium and large size were used as test materials. In displacement mode, the P/2 cylindrical probe was used to puncture the test samples of different parts of the seed melon peel to determine its hardness, fracture depth, brittleness and toughness.
    Results(1) There were differences in the cortical characteristics of different sizes and different parts of the seed melon peel. The hardness of the large and medium seed melon were greater than small seed melon; the fracture depth of the large seed melon were greater than those of the other two types of melon; the strength and toughness of the stalk and middle and upper seed melon peel were generally higher than other parts. (2) Through regression analysis of the test values of various texture characteristics of different parts of the seed melon, it was concluded that the strength of the seed melon peel, the crispness of the peel and the position satisfied the Gaussian function model, the depth of the peel, the toughness of the peel and the position satisfied polynomial function model. (3) The coefficients of variation of the cortical characteristics of the large seed melon were larger than those of the other two specifications. The coefficients of variation were: peel strength 13.25%, rupture depth 8.83%, peel brittleness 16.26%, and peel toughness 15.73%. Among different parts, the coefficient of variation of each texture characteristic of the equatorial peel was the largest. (4) Correlation analysis showed that: the texture characteristics of different parts of the seed melon peels showed a significant positive correlation, and a significant negative correlation was relatively rare.
    ConclusionIt is the first time to clarify the change rule of the cortical characteristics of seed melon peel, which can provide a theoretical basis for the study of other biological characteristics, storage and preservation of seed melon.
