Purpose The optimal hybrid combinations was selected by comparing and analyzing the crossbreeding performance of Baoshan pigs with other pigs, it is important to develop and utilize genetic resources of Baoshan pigs.
Method In the experiment, 4 Baoshan pigs (2♂、2♀), 4 Duroc×Baoshan pigs (2♂、2♀) and 4 Berkshire×Baoshan pigs (2♂、2♀) were selected for slaughter performance measurement and meat quality inspection. The experimental results were counted and analyzed.
Result The body weight of Duroc×Baoshan pigs before slaughter was 123.25 kg; its eye muscle area was 39.32 cm2 and its protein content was 20.10%. Duroc×Baoshan pigs and Baoshan pigs had highly significant differences in terms of pH1 and muscle fiber diameter (P<0.01). Compared with Duroc×Baoshan pig’s slaughter rate, water content, skin rate, eicosanoic acid content, eicosaenoic acid content as well as multiple amino acids, Baoshan pig’s these indicators had obvious comparative differences (P<0.05). In contrast with Baoshan pig, Duroc×Baoshan pig’s lean meat rate, fat rate, total amino acids and delicious amino acids got corresponding improvement, but the difference was not significant (P>0.05). Baoshan pig hybridised with the Berkshire improved the slaughter performance and meat quality, but not as good as Duroc×Baoshan pigs.
Conclusion The carcass performance and meat quality ratio of Duroc×Baoshan pigs was better than those of Berkshire×Baoshan pigs and Baoshan pigs. The heterosis of Duroc×Baoshan pigs was better than that of Berkshire×Baoshan pigs. Duroc×Baoshan pig is more suitable for the production.
